      Yeah, it can be worrying. I generally use aquafaba instead of egg whites because I don't have to worry about it. I also find that aquafaba is less likely to give me a wet dog smell that I sometimes get in certain gin sours with egg whites. As far as egg yolks go, I think that using a sous vide to pasteurize them is probably the best way to avoid any contamination issues. Thanks for the comment, cheers!
