      These are a local variety here in the Mediterranean, I can't recall the name. But basically, any other shrimp, lobsters, crustaceans etc will work!

      I like to use it fresh or keep it in the fridge for one or two days. Alternatively you can sous vide the oil in bags and freeze for a few months. Canning or preserving in jars is also a great option if you know how.

    Should i cook the shrimp heads in the oil for 25 minutes in the lowest setting?

      I'd recommend that you dry them out in the oven first at the lowest setting for about 30-60 mins. When they're ready they will have a little color and the shells will be completely dry. Cover them with some neutral oil and bring to about 60-70.c degrees or your lowest setting for about another 30 mins. If you are using crab, lobster or larger crustaceans, cook them in the oven a little longer.

      Hello there! It's possible, but depending on how strong the olive oil is, it might take overwhelm the crustacean flavor. I would recommend canola, rapeseed, or any decent neutral oils.
