  • It was an honor to be asked to write the theme music and bumpers when ​⁠‪@ChefJeanPierre‬ turned his bestselling cookbook “Sunshine Cuisine” into a cooking show broadcast nationally on PBS in the mid 90’s, that went on to be nominated for a prestigious James Beard Award.
    We also did an other series together, Incredible Cuisine, and after I wrote that theme Chef Jean Pierre invited me for dinner at his award-winning South Florida restaurant, The Left Bank. I still remember the Chilean Sea Bass I had that night as one of the best meals I’ve ever eaten. But a real personal highlight of that night was watching Chef pull up in his Porsche with a beautiful lady by his side, cranking my new theme song over the speakers from a cassette I had sent him during preproduction.
    Another gem from my newly-rediscovered collection of my old VHS tapes in my garage.

    The only thing different from Chef Jean-Pierre's video of over 20 year's plus from today is the colour of his hair. Entertaining, educational and adorable. It just shows his genuine sweet personality. Respect him even more!

    So much fun to see his younger self cook! He's doing some things here that he would never do now. Like cutting the shallots not only with the fibers but horizontally thru them before chopping and pouring olive oil with the butter thinking it will keep the butter from burning😂 i've learned so so much from this guy he's amazing and so much fun to watch

    I didn't know he was ever so young, LOL. I love his newer shows, never miss one even if I'm not interested, perhaps he will convince me. I fill a freezer back with all my seafood shells, even cooked lobster shells, Mussels and what ever shell fish. They will keep for 17 years in th3e freezer.

    He is precisely the same effervescent fellow then that he is today. Silver fox now, gorgeous flowing locks then are about the only difference I can tell.

    In the late 70's we did a table side dish shrimp and crab Au pernod almost exactly the same recipe but add crab meat when shrimp are almost done and replace Sambucca with pernod

      Right? It's the timbales in there that does it. Back then, Miami Sound Machine was truly the embodiment of the "sound of Miami" and broke the Miami sound of that era all over the world, so I can totally see that. Gloria's husband Emilio was a fixture on the Miami arts scene and it's kind of one of those things where he was influenced by the local culture that, he in turn, influenced back to the popular culture of the day. Miami Vice, of course, and the overall vibrancy of the look they gave the city on that show was tremendously influential in how every production coming out of South Florida was shot as well.

    I wish you had not altered the aspect ratio of the video to make it wider, I would much prefer to see it in the original version. I just cannot watch it like this, 4:3 aspect ratio is how it was made and how it should be watched
