Ok, so when I try to use anything with dollar signs, it doesnt work. I think that this only works for when something is really purely in the equation format I guess. Because in an actual latex, you need dollar signs but here the dollar signs mess everything up. Have you noticed that?
Ultimately, I want to be able to copy a whole document of Latex code and just convert it into Word
Word can handle quite a lot of Latex code but still not everything. So if you are copying the whole document into Word, it makes sense that there will be some errors. Unfortunately, I don't know a way to copy/paste full documents.

Make sure you are using the latest MS Word for Windows
Me neither but I realised I was on Word 2010. Download the 2016 version and it will be fixed.

How in Excel?
I've never used this in Excel, but I don't think that there is a function for that
