Taco Sausage

We use 2lbs of freshly ground, 80/20, chuck to make tacos the fun way - in a sausage!
Recipe for a 2lb batch:
Paprika - 10 TSP
Salt - 3 TSP
Corn Starch - 3 TSP
Cilantro, Dried - 3 TSP
Cumin - 2 1/2 TSP
Onion Powder - 2 1/2 TSP
Garlic Powder - 2 1/2 TSP
Oregano - 2 TSP
Chili Powder - 2 TSP
High Temp Pepper Jack Cheese - 6 oz
Water (or your favorite Mexican beer) - 1 cup
