    Jaffna Mutton Fry is a specialty dish from the northern region of Sri Lanka called Jaffna. It’s robust, heavily spiced and teams very well with steamed basmati rice. This dish is actually a dry curry preparation which is extremely popular amongst the Sri Lankan community because of its bold aroma and flavours. The gravy reduces and the flavours cling onto the meat giving you amazing potent flavours in every single bite! If you like spice, heat, and mouthwatering mutton you definitely have to try this recipe!

    Ingredients:
    Marinade
    2 Tablespoons Indu Sri Jaffna curry powder
    1 Teaspoon Indu Sri Black Pepper powder
    1 Teaspoon turmeric
    1 Teaspoon Indu Sri crushed red chili
    1 Teaspoon salt
    2 Tablespoons Ginger Garlic Paste
    3 Tablespoons vinegar
    2 Tablespoons Dark soy sauce
    For the Dry curry
    1Kg Mutton (leg or shoulder)
    2 Tablespoons Ghee
    1 large red onion
    1 Tablespoon Indu Sri Jaffna curry powder
    Sprig of curry leaves
    4-5 cloves of sliced garlic
    1 inch piece of ginger chopped
    1 Teaspoon Indu Sri crushed red chili
    1/2 Teaspoon turmeric
    4 x 1 inch piece pandan leaf
    1 Teaspoon Indu Sri black pepper powder
    4 cloves
    4 bruised cardamom pods
    1 Ceylon cinnamon stick broken
    Pinch of cumin seeds
    3 broken dried red chilies
    Salt to taste
    Juice of half a lime
