It still blows my mind that it's taken you a year to change more than just your pedals! I swapped out every contact point immediately including 60mm rise bars. But I'm super tall and I needed that just to bring my grips up to my saddle height on the XL frame. The T7 is an amazing bike!!!

Yes, mainly did this for setting up the right amount of sag with my weight
