Not tested this on the Civic. I would guess holding the brake on the start is the easiest option. You could try a button clutch and experiment with different levels of partial throttle. Or the old method of dropping into first on green with partial throttle. Just need to experiment and see what work for you.

You can use a button clutch. iRacing has a clutch bute point setting now.
