    I've adapted this method now to making hash browns with regular potatoes. Not only is it less wasteful than simply draining off the "potato water", but the hash browns cook much better because of the more thorough starch removal.

    This looks just how our indigenous people 🇧🇷 use to extract tapioca (the starch) and tucupi (the yellow fermented liquid) from Manihot esculenta (Mandioca, Macaxeira, Yuca, Cassava)
    With the tapioca we tend make a thousand different dishes in Brazil. From cheese breads to tacacá soup.

    Just guessing here... If you were to grow your own sweet potatoes for this, the yield might be higher if you didn't cure the roots. Curing converts some of the starch to sugar, giving a sweeter potato for eating, but converting insoluble starch into sugar that would go away in the rinse process.

    I have been wanting to make this for other stuff just want to please ask if i want to turn it into dough for making noodles do i add corn starch to it and cold water please.
    Also can i dry with normal air ans leave it out till i get the thick white block powder please. Is then called lotus powder or is different Thank you luv ur method

    What do u do with the sweet potato after extracting the starch? Can flour be made with it?

      Yes. Dry it and grind and sieve it and it’s flour.

      I discard it directly. We usually gave this to our poultries when I was young. I am not sure how to use it now.

      This can be used as snax with little preparation, it has fibre,free of starch ,even diabetics can eat.

      There are two ways of using the residue. One is the water alone, the solid waste, or both mixed together. They are fibrous, add mass to your food,free of starch,do good for diabetics.
      Put all of them together, add grated green chillies,ginger, little semolina,salt, finely chopped shallots, allow to rest. It has to be a thick pancake batter like consistency. If not add wheat flour .A dash of yoghurt adds natural fermentation. You can make round pan cakes on a hot tawa,with seasame oil around it,be gentle.
      2. To this mix of solid and liquid residue, allow it to cook on thick bottomed vessel, on a slow fire to allow it to thicken. You can add teracle of palm sugar or crystal sugar, season it with dry ginger powder,cardamom, and roasted cummin powder. Add a cup of coconut milk ,simmer and remove. A healthy drink.
