It depends on which occasion. Party matooke, ceremonial dishes, and quick meals. What you are making is one of the quick meals. ... There are some words in Kisi which are similar to Luganda ..Leero for today.
Lizzy I am from Kisii too but I'm residing in the USA .To avoid black colour on your bananas, put a little salt in the water,peel your bananas dipping them inside the salty water.when you are done peeing, put them in a sufuria and cover it with a lid . shake them and you will see the outcome. That's what my mother thought me 😂.

Liz to avoid that dark colouring, you have to make sure that when you peel the matooke, peel off the green colour and leave it white and to avoid the dark colouring in your palm, just put enough oil and use warm water and soap to wash it off

Hi Liz & Atti, I am also from Trinidad in the Caribbean and we put a little oil in the pot to boil the green babanas to avoid the stains from sticking to the pots.
I enjoy you guys so much. I do prefer my meat tender. If We’re taking the skin off before boiling we slice our plantains lengthwise (under the skin, not deep) in two different parts . It makes it easier to peel. Even if boiling we slice and boil with a little salt. To take of the darkness on the plantain we add ice in the water after boiling. That’s if you’re serving boiled plantain by itself. We make fried plantain (sweet and green) since I’m from Haiti. I like this new recipe, thanks for sharing.

Liz, I'm so gonna try matoke now that I've seen how you've prepared it. I'm Zimbabwean and we don't have matoke in Zim but having lived here 24 years, I've got to enjoy East African food so much especially chapati and pilau rice. I also like plantain. I learned to cook green bananas/figs another way as Atti says we can do potatoes as well also white yams we all have to eat let us just open our palates more and enjoy each other cultures
Hi Liz you seems like a very good cook I love how you demonstrate before begin,what you can also do is add a table spoon of oil to the water for cooking the bananas to remove the dark colour.
I love love matoke. To avoid breaking it while I put spices once I've put tomatoes in the pot,allow to simmer,add water as required,allow to simmer for 10 mins then put the matoke in n allow to simmer on low heat till fully cooked.

Do it in water with the oil on your hand you can also cut the top and the stem and cook it in the skin then take the skin when it is cook

Hello Liz. To avoid bananas turn black you wash them in salty water.. To protect the hands use polythene bag to wipe them out
