I find it really interesting that being from south Louisiana Tamales remind me of my child hood. Every weekend in the mid 60s through the mid 80s there was a lady that sold Tamales from her truck near my home and this was was a real treat that I still crave today. This lady passed away in the mid 80s and was missed by hundreds of cajuns that also loved her Tamales. Even today when I can find real Tamales it reminds me of this little old Mexican lady in her truck always smiling and always joking with the children.
I grew up just outside of New Orleans and I remember having tamales that were soaking in a hot sauce. Like after you ate the tamale you put the entire husk in your mouth kind of sauce 😂 I’m not real sure how tamales became so popular because we didn’t have many Mexicans, more Cubans really. Perhaps it was the Manuels tamales they sold I believe on carts and in some small stores
I've never made tamales, but growing up in South Texas, I've eaten more than my fair share. I even had some for dinner last night. They always remind me of Thanksgiving and Christmas time at my grandparents' house with the whole extended family.
I learned to make tamales in Arizona. We use some of the chili gravy in the masa. Adds flavor and a hint of color. My favorite way to eat is to unwrap the tamal and brown in butter. Serve with an egg over the top.
I had some friends from Mexico stay at my house to make these (In London), getting the husks was challenging (I had to bring them back from California) and we brought the mase in from Mexico. When we were almost done, my friends left for home, and THEN told me that it was bad luck to leave the room when the tamales were cooking (it was a long night). Chicken and Pork Green Chili and even beef jerky (when we had more dough than ingredients). Ingredient wise, I agree with you. The Green Chili were knee buckling good as expected, (when I find some people to join me to make this next time, these would be AMAZING with smoked brisket or cheeks) and the Jerky was much better than I guessed. Thank you for sharing this recipe (I went into this naively blind when we had our Christmas treats), I wish I had your video available back then!!!
Getting ahold of Masa in the U.K. is seriously difficult if not impossible! I'm American but my sister is married to a Brit and lives in metro London. She can't find it anywhere
Try Mestizo, that is an I credible authentic Mexican restaurant in London (also as unique as rocking horse poo in the UK). They also sell groceries and I've seen it occasionally.
@@MisplacedAmerican Have you ever tried going to American military bases and buying stuff there? I've heard they have full on American grocery stores on them, and theyre open to the public (i.e. the British public....if youre American you can't shop there because of some weird tax thing).

When I worked in San Antonio we always celebrated New Year's Day with tamales. My favorites were the barbacoa tamales & the bean tamales. The others were good but these were the best!

It looks amazing, I would love to try it, never had tamales before. In Brazil we have a dish that is remniscent of Tamales, it's called pamonha. Instead of using masa harina, it's made with freshly ground sweet corn, stuffed with fresh white cheese and can be done sweet or savory. If you have a chance i would strongly advise you to try it.
I've tried your tamales and they are super delicious. You should try Mexican tamales they are the bomb "diggity" bomb if that's even a word. L🤣L.🥰😋😋😋😋😋
The first time I tried making Tamales it was a very tasty nightmare :) While I don't make them regularly or even often enough to say I make them, they are always fun, and always result in a good dinner when I do. However, I think I am going to have to give them ago again because that was one heck of a simple and easy folding you did there that didn't involve cleaning the floor or the ceiling or the cat!!!
@@2guysandacooler Love it. I added roasted jalapeno peppers and it tastes fantastic. So we'll have vegetarian, smoked brisket and smoked pork shoulder tamales. I did a test batch of just the veggie version and it was a huge hit. Thank you Eric for the inspiration to take this on!
Do you have any idea if lamb tallow will whip up?? My mom is allergic to pork so I have been making my tamales using olive oil in the masa.... I know not the same but it does work pretty well

It's a northern and northeastern thing, but also eaten by whole country in a traditional party all over the country from June to august. It's almost the same as this receipt, but very easier and I bet even more flavorful! "Cook like a Brazilian" would be a dope series 😉

These look 100x better then any tamales I find in my area. I might have to just start making my own

I like using roasted poblano peppers, roasted corn, black beans, jalapenos, sauteed onions, cheddar cheese, and to finish it off a little salsa.
