Glad you enjoyed it Faye! For a 2lb loaf, you need 1-1/3 cup water, 4 tsp oil, 1/3 cup brown sugar, 1-1/4 tsp salt, 4 cups whole wheat flour, and 2-3/4 tsp bread machine yeast (or 4 tsp regular active dry yeats)
This is a copy from my bread maker...hope this helps :-) The ‘preheat’ phase warms the ingredients to allow the yeast to perform optimally. It also allows heavy grains and flours to absorb liquid, before softening and expanding for better gluten development. During this phase, no movement occurs in the bread pan.

Three cups of flour _are_ indicated on the video: two were pre-measured, the third was measured on-video to demonstrate technique. All of the measured flour was added to the loaf pan.

No offence but my 100% whole wheat comes out twice as high as yours. It took me months of tweaking the recipe to do it. Ingredients: 5 cups whole wheat flour 2 cups water 2 Tbls powdered milk 3 tsps rapid rise yeast 1.5 tsps salt 2 Tbls olive oil 1 Tbls molasses 2 Tbls honey I have 2 machines. I use quick whole wheat setting on my Zojirushi and rapid whole wheat setting on my Breadman Ultimate. Zojirushi takes 2 hours 8 minutes and breadman 2 hours 20 minutes.
the trouble with 100% whole wheat breads is that they are short, dense, and can be inedible, as one commenter below has said. Mine was exactly that, not good. I read it is helpful to add an egg. I make "wheat bread" using 2C bread flour and 1C whole wheat so I can get a normal tall loaf.
I made this in my new bread machine, and I must say it turned out perfect, BUT it must of weighed 5 pounds, and so dense, it's now waiting for it to be made into breadcrumbs, no one would eat it, not even me..
Great video. Now that bread seemed small as like 1/4 the size of the pan. Is that normal as I just made 100% whole wheat bread and my loaf was small also and I assumed I did something wrong. Normally I get a loaf with normal bread as two cups of white and one cup of whole wheat bread rise to the top of the pail and that is for a 1.5 lb loaf. So is 100% whole wheat bread never going to rise that much?
Why is for 1an half lb loaf you call for 1 teasp oil but for a 1 lb you call for 2 tablesp oil?? Why does the smaller loaf take more oil then the biggie one??
Scarlet Dove, I doublechecked the recipe that came with my bread machine, and it does actually say 2 tbs of salt for a 1 lb loaf. It does sound weird since it's more salt for a smaller loaf. I rarely make small loaves so I haven't tested it out to see how it tastes.
JourneyToSelf-Sufficiency Thanks but I won't try those 2 T--it jut makes no sense and probably a misprinted measurement. Look at some other recipes for 1-lb loaves and get a more balanced salt measurement.
The crumb on your bread looks doughy, like it hasn't risen well. It should have a nice open crumb, with lots of nice little, or big, holes. Perhaps you need to check the potency of your yeast. Also, when loosening the bread from the pan, I would use a wooden implement. Plastic will melt upon contact with heat.
Here's my recipe: Sunbeam bread maker. 2 pound loaf: 1 2/3 water 2 tbs of oil. (I didn't have butter) 4 tbs white sugar (didn't have brown sugar) 2 tsp salt 4 2/3 cup whole wheat flour 1 tbs yeast (bread machine or fast rise) Place in order: water, oil, sugar, salt, flour... then make an indentation in the flour pour in the yeast. set the bread maker on option 3 for a wheat bread, set color to medium, choose 2 lb loaf, click Start. Family lived it. Not too sweet, nice texture.
It depends upon what is in the cup! Some ingredients are heavier than other ingredients are. Like a cup of feathers would be far fewer grams than a cup of lead would be.
FYI I proof my yeast with a bit of sugar or honey, Let it proof for about 7 to 10 minutes. I find that I get a better rise on the bread

My recipe calls for "vital wheat gluten" 1 Tbs per cup of flour. Helps with the rise.

Make sure you're using fresh yeast. If it's been sitting around for awhile, the dough doesn't rise as much.
