I have used those whip canisters before. You fill the canister with your heavy whipping cream, vanilla and powdered sugar, put the top on and you attach a co2 canister to it and shake it a bit the co2 does most of the work for you. It comes out like the nice rich whip from some coffee shops.
Sheet pan plus rack… lay your breaded meats on, cover and refrigerate while it rests while you are prepping other items. I do put smaller stainless sheet pans in my dishwasher.

You should watch for a local auction for used, scratch and dent or surplus restaurant equipment. Do a video. Take an actual restaurant manager with you.. maybe someone retired.
Those whipped cream containers have a learning curve I'd just stick to self whipped. Prob not worth it if your not using whipped cream constantly! But u can make other whipped things😮😊

If ur using too much whip cream its easier to make it with the dispenser but you need to have co2 carrriges for it

You can season carbon steel just like you can season cast iron pans. The dark woks found in Chinese restaurants are normally seasoned carbon steel.
