Also I'd like to add, the "touch" also depends on the piano patch or sound you are using. Me personally, I HATE the full grand Yamaha patch on the motif. Not enough body in that patch to utilize "touch". Just my opinion..

to expand on touch, if you are playing on an acoustic piano (not a midi piano) the way you hit the key will change the way the hammer hits the string, and you can change your tone that way too. It's more than just loud or quiet

a great place to start is learning all your scales, so you can play in any key. personally I learnt just by playing the piano. I would sit down and improvise for an hour and a half when I had the time. (more often than you think)
