I know that Koreans never go without pickle in the refrigerator. I am Armenian and Armenians do the same with yogurt. It’s a common staple. You can find a pretty good recipe online but basically you can boil the milk a certain degree just when it’s about to boil over you shut it off, then you pour it into your containers and have them sit in a towel or small blanket overnight for 12 hours. It makes fabulous tart yogurt. Some people start out with the yeast, I simply buy milk and boil it. It does save a little money this way and the yogurt lasts a really long time so I have a full tub available in the fridge all the time.)
