Salam Bajia, bhohut shukriya is recipe ka, aaj hamare yehan barish horahi hey or bada dil chah reha hey koi tali hoi chez khaney ka, mein aap ki poori or halway ki recipe ko subha mein istmaal karongi or abhi shayad kachori ki. Allah Hafiz.
Kachori filling! Soak ½cup moong daal in warm water for 2-3 hours and grind coarsely. In a wok, add some oil, add 1ts cumin seeds and fry a bit, add coarsely crushed 1ts saunf, 1/3rd ts garam masala (homemade), heeng/ asafoetida 1 pinch, 1/3rd ts saunt/ dried ginger powder, ¾ ts roasted whole coriander and cumin seeds powder and anardana powder/ pomegranate seed powder ½ ts. Fry a bit, add the daal, ¾ ts salt, 1½ ts full crushed chillies. Fry until you get its aroma and looks separated it will take easily 15 mins. Kachori dough ! Knead 2 cups plain flour/ maida, ½ ts salt and 1/3rd cup oil and luke warm water. Rest it for half an hour. Don’t knead it too soft. Fry the kachoris on md-low heat until its golden/ dark colour.

Do you store in air tight container or in the refrigerator. I live in Singapore and it's so scary to leave anything outside due to the heat. Please advise. Thank you so much.
+Chitra Rao anything with masalas keep in the fridge n heat it up or keep the mixture of dal in fridge n the dough to make it fresh when ever u want to cook it.. dont keep longer in the fridge after 1 week.
