He was literally a health nut before the whole muckbang craze... he knows how to lose and maintain weight. You're probably right in thinking that he's chasing some sort of high and I do agree he would most likely gain more subs in the beginning if he turned genuine, but I believe he would end up with a smaller (yet more loyal) fanbase in the end. Personally that's the kind of fanbase I'd want if I was a TH-camr, but I get the feeling that's not the case for him. The internet tends to bring out the worst in people.
