I'm getting that same grainy imagery with my GoPro9. I have mine mounted to the bike directly. I'm going to try a helmet mount next. When I walk with it, the image is undeniably smoother and crisper. Have you tried mounting it to your helmet?
This is with the default settings. 1080p and stabilisation in the default settings. You can turn it up. Also check that when it's playing on your device that the resolution is in 1080p. Sometimes TH-cam lowers the playback quality depending on your bandwidth.
