    It is great to see you try all different recipes. You are right, it depends on where you are from they will be made differently. We put a LOT of lard in them, both vegetable and animal lard. I have been voluntold to mix the masa for the last 5 years, which is not an easy job since it is done by hand. I don't mind it since my mom can't do it anymore and I love helping in what I can. I may try the tortilla presser since I am terrible at putting the masa on the cornhusk, but we put way more masa than you do so I am not sure if it will work. One tip I can give you is this:
    Fold the masa in to the meat on both sides without the husk, then fold the husk. This way your tamal will come out full and the masa will not be wrapped in the husk and open when you unwrap it. In case you want to know, masa is with a short a. It's not maysa.
    I love your videos! I want to try your clamshowder recipe, my fiancé loves that soup and I want to learn how to make it.

      I am going to ask you why you are using a table in your tamales. 😂😂😂 I’m totally teasing you! The corn mixture is pronounced Mahsah.
      Maysuh (mesa) means table, in Spanish. You are just too cute!
      I love the red chili sauce! I’m curious, do the little flakes from the skin soften? I once forgot to strain my chilis and I had little pepper flakes.

      I was taught to make tamales by a Mexican Nana in a small town in Arizona. Everyone makes their own version, which I find so interesting!
      Lisa adds a lot of meat and most people don't. I do. I think that's what makes them so good! In addition to using the chilis she used. She did such a great job!

    Great recipe! I grew up in Chicago and still live about an hour away just across the state line in Indiana. The Mexican food in Chicago is sooooo good. There are so many authentic little taco places and even carts that sell the best churros. I am a fan of tamales but authentic steak street tacos are my jam. I think my favorite tamale is poblano and cheese. I will show this video to my husband. He makes such good Mexican food. We are both from Chicago and have been spoiled by its food for many years 😊 Chicago is best known for pizza but their tacos are the best!

    Southern California girlie here. Yes everyone has their own way of making tamales 🫔. Thanks for sharing your way and your recipe.     I to use the tortilla presser but i use a tortilla plastic bag cut it open but i put the oja in the presser and put masa on top press it then put put the meat in then fold the tamale 😊

    My family has made these for years, never with a tortilla press though! That looks so much easier than spreading with a spatula! I love how you do your 🌶️🌶️ peppers too! It beats boiling the chilies. In our family we pronounce it Masa instead of Mesa. Thank you for sharing, I can't wait to try it your way next time!❤

    I have a question about the husks. Is there a rough side and smooth side? If so, I would assume the smooth side is where the masa goes against, right?
