Just fyi, laccha paratha and kerala parotta are way different, just that the concept is the same. I have eaten both extensively and i can say that kerala parotta is way soft flaky and filling.
Their daily wages are a bit higher than other workers in the restaurant because their demands are high and finding a porotta maker is a bit tough and it's hard to practice.

Not Paratha it's porotta entirely different from northindian Paratha u should try it tasty and crispy. Mix of maida & atta powder ,egg ,rice bran oil
