      Jim, Celia replying, as the chief taster, I am always amazed how dishes like this create such intense flavour from so few ingredients. The trick Enzo tells is slow cooking.

    Your ragu looked delicious!!! So, I came across your channel a couple years ago when I was researching everything Italian before my move to Firenze in October of 2021. I am back in the US now but I am actually moving to Castellammare del Golfo, Sicily TOMORROW!!! I am looking forward to my new life there and to all of the Sicilian dishes that I will be trying!       I always happen to make more ragù than necessary so I end up freezing it. When I need it, I thaw it in the refrigerator; when I reheat it I make sure that is cooked through (even more than necessary...) in a saucepan with a lid. If it is too thick add a little bit of water.

    We are coming up to winter here soon. Your ragu' will be perfetto. I suppose it would be a sacrilege to use a pressure cooker to shorten the cooking time ;) No I'll wait for a rainy day and give it 4 hours!

    I made ragu yesterday! Took 4 hours but is wonderful!! Is there a restaurant in Lucca that you believe serves the best ragu?

      So happy that it worked. About Lucca we don't really go to restaurants in town as we prefer to eat out in the countryside. Cavallino bianco in Benabbio is at the moment one of our favourite traditional restaurants. Their ragù is good.

      Thank you for your comment. If you look through the list of video you'll find a lot of Tuscan dishes:
      Spinach ravioli, Panzanella, Pappa al pomodoro, Farro & benas soup, Ribollita, chicken in Chianti, Bruschetta (which originates in Tuscany), Gnudi and more. We cook Tuscan Food and Italian traditional food including recipes from Naples where Enzo was born.
