    I have story to tell you. A few months ago, after searching the internet for recipes, I came across your channel and immediately liked what I was saw. I began pressure canning, using your recipes for chicken soup/stew and beef soup/stew. One of my two nephews living with me is a welder who works different hours, almost daily. During warmer months he stops off and gets a burger or pizza; during winter months, he wants something more substantial. He has become quite the pressure canner, and has bought a second pressure canner. We now have two canners going on the stove at the same time. The other day, he thanked me for introducing him to pressure canner, bought a pressure canner for his sister, plans to teach her and her husband how to pressure can, has taken food to his friends, telling them about pressure canning, planning to take a canner over to them and show them how to use it, and has initroduced another friend's mother to pressure caning. His mission is to teach as many people as psosible how to can their own soup. Thank you and God Bless you and your family.

Last week he was canning the chicken soup/stew and I started to help him cut the vegetables and he said, "I got this, Aunt Cat, you g and relax." He knows that I do not like chicken thighes whieh are his favorite, so he has canned chicken breast soup/stew for me. He does allow me, and I am chuckling when I write this, to make the chicken or beef stock. Then he takes over.

      That’s awesome! I’m 62, when I was about 12-ish my Mom taught me to water bath can peaches and jam. When I was a bit older she taught me pressure canning. I’ve been canning more than 50 years. It’s a very good skill to know and your son’s friends will be happy too. I can my own broths, meats, beans, jams, etc. you are a great Mom!

    I always refill my spice rack bottles with those packaged spices. With Mexican oregano, be sure to crush the spice between your hands when adding to your food. I’m envious of Jim’s tortillas ☺️

    We love to use those jumbo tortillas for making burritos, that way you get a big burrito instead of the small one that results from folding a regular size tortilla, but we tend to get creative and use them for anything.

    In our area we love to check out the various Amish produce stands and bulk food stores. There is one Amish bulk food store not far from us that carries a wide variety of quality spices at a fraction of the price from the grocery store. They also carry a nice variety of cheeses you cannot find at other places. My husband and I love exploring the little "out of the way" but not far away places. The back roads have many hidden treasures.

    I rarely cook and at this stage of my life is not likely to change. I always joke that my iron and my stove have cobwebs and that's exactly the way I want it to stay.
    Nonetheless, with that being said, I always enjoy your videos whether it is a cooking video or not. I love the light-hearted banter between the two of you and the way that you each give the other license to express your opinions and preferences. You are not invested in the "my way or the highway" mentality.
    I love the way you are both on the same "prepper" page.
    Pam, you are sharp as a tack (mentally and physically,) even though you may be "almost 80 in 6 weeks."
    I really enjoy the banter between the two of you. Jim you have a subtle, understated humor, and I love the way Pam teases you about your love of cheese and ginormous tortillas.
    If it wouldn't be too personal, I would request the two of you to get out of the kitchen and sit side-by-side on the living room couch. I would love to hear the story of how you met, what your first impression was of each other, and what it was that gave each of you the courage to blend your lives, your hearts, your fortunes and your futures together.
    Just a thought!

    The way you talked to each other so sweetly in the store did my heart ♥️ good.
    My husband uses the hard tortillas and puts some refried beans and a thin slice of pepper jack or Munster and then puts it for 25 seconds in the microwave.
    Then finely chopped white onion, a little finely chopped tomato and a little lettuce. When we have Oscar Meyer liverwurst we put little bits of that in the very top.
    Yum.

      That sounds very good. I like to fill my tortillas with cheese, fold them up, cover them with cheese on the outside, place the in the microwave until they cheese is melted and cover them with salsa. Jim

      Well, that sounds delicious. For the soft tortillas we add almost any food. What’s really good is left over pork roast shredded and hot banana peppers. It’s endless 😋 and yummy.

    I roll up the package and squeeze into a jar and then use the food saver attachment and take out the air. They store real well..(the tortillas)

    What a great little store! I love mexican food. Looking forward to the future recipes. Whenever I go shopping I put my purse on the top seat and strap it in with the child safety belts. (Please keep your purse zipped). Costco, TJ's, Sprouts it doesn't matter. I always get distracted by all the goodies. I live in the SF Bay Area, so your state is a lot safer than CA.

    We lived in the Florida Keys for a long time, and I miss the Key limes. Also, I miss having a freezer full of Florida lobster tails that our family got during lobster season. I took these things for granted at the time, but what fond memories!
    I encourage you to make smoked fish dip sometime. It's a Keys favorite, and you can find good recipes online. I think you'd both enjoy it, and the process is fun 😊

    My town has two Latino grocery stores that we go to. Our Walmart carries a lot of these items too. I like to buy the nestle media crema. I’ve also bought several dried medicinal herbs and medicinal teas there too.

    Pam: It is good that you purchased a large quantity of the limes. It will take a lot of the small limes to make a dessert, but key lime pie is not the same without them. Yes they do taste different than the Persian limes we get at the regular grocery stores. Be sure to zest them as it makes a wonderful addition to beverages or other baked goods. Those large chips would make wonderful Quesadillas just add some cooked chicken, cheese and seasonings and heat for a short amount of time in a shallow skillet and you would have a really quick meal. Next time you are there you might want to get some Epazote to put in your dried cooked beans after all it is supposed to help with the gassiness of beans. It is also good for intestinal parasites should you have any.

    When we discovered our Mexican market we discovered Auqua Fescas. If they have them they are worth it to help cool down on a hot summer day.

    I'm glad you had a good time at the market. There is a recipe for Key Lime pie made with avocados. I think you will find that the Mexican oregano has a richer flavor than the Italian.

    My husband makes the best flour tortillas. Today, he is going to make some Super Sized ones so that we can try to make the replica of the Taco Bell Crunch Supreme. ( we have corn tortillas on hand ) I can't wait to try it. 😋

    Pam those tostadas would be great with Refried beans, shreddit lettuce, dice tomato, avocado slices and a little Mexican cheese on top we called them chalupas had them growing up in Eagle Pass, TX . I now make them for my daughters they are delightful I love all your videos but I think this is my favorite being Mexican American myself

    I grew up on blue meal. We ate it for breakfast as hot cereal, fried the leftovers for lunch along with an egg as a sandwich. I love the distinctive flavor of blue meal

    Mexican oregano is definitely different than Mediterranean oregano. I prefer the Mexican variety. Do rub it between your palms before adding it to your cooking. Added bonus… the smell the oils leave on your palms is awesome!

    Completely agree with you about trying to source fresh local produce from farmers markets & farm gates.
    I am so lucky to have some within my area and an egg farm with fantastic free range eggs for sale.
    I’ll scrimp and save on lots of things things but food that fuels the body, it’s worth it to have lovely fresh, local & in season food. Definitely is worth the extra shopping effort. Plus my money goes directly to 😮the producer, not to faceless corporate grocery chains with profit as their only goal.

    Hii Pam /Jim this was great to see local business in your area.. A u tube channel called becoming a farm girl made cornflakes from the fried tortillas and used the flat bread as a substitute for the pasta in her lasagne.. Thought you may want to take a look at her channel.. See what you both think as I have learned so much from her on food storage and using EVERTHING IN A PRODUCT..Lochness Scottish Highlands..

    Mexican oregano makes all the difference in Latin dishes. I understand it is not in the “oregano” family but in the “lemon balm” family. But not sure. I love my local Mexican market.

      @@RoseRedHomestead Better Than Bouillon doesn't have MSG. I haven't been able to find a powdered one without it.
      Next time you go there, read the ingredients in the sodas- the Cokes, Pepsis, etc, have sugar instead of HFCS!! If you taste one, you will have a flashback to your younger days, guaranteed! I live in California where we have a lot of "Mexican" markets. We are starting to have a lot of "International" markets, too, which apparently covers most of the Middle East. Here in Sacramento we also have some fantastic Asian markets.
