Debbie, My nan used to cook with what we call waste meat products now in the UK. My nan had 17 children to feed and there was always a stew or soup on the stove. Pigs trotters, pork belly, pigs tail, ox tail, tripe, chicken feet, neck etc etc. Some meat like tripe and pork belly have made a come back, but not all. Blessings

I put evenrything in my Instant Pot, unsoaked peass, scalded pigs tails, and garlic. Browning my beef as you suggested. When the peas and pigs tails are cooked, I dump everything in my big soup pot along with the beef. Otherwise, I will be doing every thing else as you are recommending. Looking forward to my end result. I always enjoy cooking with you because you are the best authentic jamaican cook out there on the net. And of course, love your lyrics. Lol!!
