Italian Garden Delight: Homemade healthy Spaghetti & Meatballs with Herbs and lots of vegetables

  • 1 pound ground beef
    1 pound Italian sausage
    3 tablespoons olive oil
    1 onion, chopped
    1 carrot, chopped
    1 zucchini, chopped
    1 red bell pepper, chopped
    2 tablespoons minced garlic
    ½ teaspoon salt
    ½ teaspoon pepper
    1 bay leaf
    One 28-ounce can whole
    Roma (plum) tomatoes
    8 ounces whole wheat spaghetti
    1 cup chopped fresh basil or 2 tsp of dried basil
    1 Put the oil in a large pot over medium heat. When it's hot, add the onion, carrot, zucchini, bell pepper, bay leaf and garlic. Sprinkle with the salt and pepper and cook, stirring occasionally, until the vegetables soften, 5 to 10 minutes.
    2 Add the tomatoes to the pot and bring to a boil, then adjust the heat so the mixture bubbles gently but steadily. Cook, stirring once in a while to break up the tomatoes 15 to 20 minutes. Add meat and cook with top on for another 15 minutes.
