I have both in my house and I think at the end of the day it comes down to preference and what you’re going to be using it for. If it’s just a display and smart home hub the max is perfect for that, if you want to go all in and spend extra than the pixel is good but it does lack the items I mentioned in the video.
The tablet cannot function as a security camera and the speaker on the max is substantially better than the tablet. I own both and plan on returning the tablet because I pretty much only use it docked and the Max functions much better that way.
There is no app store on the max. It does not run on Android. The OS is also much slower. If all you want is hub functionality then get the max. If you want anything resembling what a phone or tablet can do (plus hub functionality)then choose the tablet.

Do you own a Nest Hub Max or Pixel Tablet, if so which one feature is the most attractive for you ?
Nest Hub Max. The Nest Aware security cam feature was a deal breaker for me.

How's the built-in microphone? Is it as sensitive as the one in Hub Max? When I use Google Assistant, usually I am 6 feet away from the smart device.

The tablet is a really good hub but the nest hub only looks like a tablet. It doesn't really compare to a tablets functionality.
