      If there's some large husks stuck with the nibs (which is what I would expect) you'd increase the speed to get them to separate I think. Decreasing speed doesn't really gain you anything that I can see.
      As an analogy in uranium enrichment where they want to separate particles with very small difference in weight you want your centrifuges to have a very high speed to increase efficiency. This seems very similar except you use airflow instead.
      This might not be perfectly analogous to uranium enrichment though. Maybe the fine husks that are left stick better to the nibs and has less relative drag in the air? I don't see how you'd solve that with less airflow. I'm imagining you'd need a "stickier" gas to filter with than just air.
      But I'm just guessing here of course. Never done anything like this.

      Perhaps it’s already been said, but... how much dirt blew out of the vacuum hose and into the nibs? Hair dryer would avoid that risk.

    That was so smart Alex! I think you could say I am ''blown away'' haha. Little tip: don't throw the husks away, you can make an awesome tisane packed with nice chocolaty flavor and theobromine (a molecule that stimulates your nervous system just like caffeine and theanine). You can use this as a substitute of coffee or black tea. ;)

    One option is to alter the length of the feed tube as well. The lower the feed tube the less speed the parts will gain and the more the air will have an effect. Angling the feed tube may have a good effect as well, if the nibs and husks are moving slower the more likely for the air to separate. Love your channel Alex !

    In my wood shop, I use a cyclone dust collector that I made, and it basically does exactly what you need. Heavy stuff drops into a collection vessel and the light stuff gets sucked up by the vacuum.

    I gotta hand it to you...
    For bulk winnowing, that is absolutely genius.
    I can't believe it worked so well, too.
    As for future endeavors into this kind of thing, you could probably use a hair dryer.
    I also saw a suggestion to use a computer fan to run at variable speeds based on voltage, which you could absolutely fine tune it to your liking.
    But I would say this was a HUGE success. Absolutely brilliant.

    You are on the right track. I've made a similar device for remove chaff from grain. You just need to give it more range of adjustment by drilling some holes on your air intake pipe and adding a sleeve made from a tin can that you can slide to cover the amount of holes needed for precise air pressure and separation. Another thing you add to improve it's efficiency is a laminar flow guide. It's just some pieces of cardboard or plastic interlocked and inserted inside your air intake to make many small air channels. Think of how the cardboard fits together in a case of wine bottles. It's made like that just much smaller to remove the turbulence from the air flow.

    I made a winnower back in 2014 ago using PVC piping and a bucket based on a design I saw on Chocolate Alchemy (their SYLPH WINNOWER
    ). You should check it out if you haven't already, it's very compact and I think performs about the same as the one in the video.
    Running it a couple of times gives the best results, probably screening beforehand would be good too as it's hard to dial it in to separate large bits of husks from small bits of nibs at the same time as small bits of husks from large bits of nibs.
    I've tried the hair dryer approach and you lose too much nibs and it's messier.

    I’ve made a variable vacuum before, go to the hardware store buy a few feet of wire, a male cord repair plug, an electrical box, an electrical outlet and a pwm dimmer switch. Use a small piece of wire to wire the dimmer to the outlet, feed the rest of the wire into the box and attach it to the dimmer. Use the male cord repair plus and affix to the end. Voilà you now can alter the duty cycle for anything you plug in.

    Might I suggest trying a cyclone dust separator for this process. It's a funnel shaped thing that woodworkers use with a shopvac to separate fine dust from the heavier solid shavings. It looks like the video you watched had something similar in their winnowing process. For an example, there is one called the "Dust Deputy" but there are many similar options out there, even some DIY videos. If you can adjust the vacuum pressure, you might be able to find the right one for separating your cocoa.

    This was a great first iteration one-off. I was thinking if you wanted to keep perfecting such a machine, you might want to study Matthias Wandel's videos where he goes over how particles dispersed in an air flow can be separated in a compound vortex. It's not as complicated as it sounds. Anyway, he's got quite a few videos on dust collectors, but in one of them he goes over how controlling the vortex allows separation of wood chunks (nibs) from wood dust(husk).

    Great succes, Alex! You could separate the two piles once more, to increase the accuracy, but the variable airflow would be a better option, I think.
    I love that you use the vacuum cleaner to both separate the nibs and husk AND to clean the mess afterward!

    I think part of the issue its only 85% is that the beans are falling too fast straight down, and clumps of nips and husks are falling together. If you had a way to break up the clumps and slow down how fast the beans are falling, you'd get a better result. I'd suggest using sticks of some sort inside the tube right before the air blows on it. Think of it like a rain stick. It slows down the beans and helps break everything up better. Just a thought. Its a very impressive design nonetheless!

      @@FrenchGuyCooking most vacuum cleaners use a universal motor frequency is not relevant here. The voltage is. I'm sure there's a way to see if your vacuum uses a universal motor. Also if you do ending getting an autotransformer, make sure u get the adjustable kind, usually named a "variac" assuming of course your vacuum again is a universal motor.

    The falling beans will hit into husks that are trying to flying away. If the flow was flat, in a sort of sheet, as it passes the airflow, this would provide a better escape route.

    Alex you could hav jus put the whole thing on the table and put a small table fan directed towards the mix of husks and nibs.- that way u can control the speed and its easy - you jus hav to clean up after the mess is in the whole room :)

    make the vertical exit pipe longer, or a down facing y-bend w/ cap. this will give the caught nibs time to separate from the airborne husk or fall into the pitfall trap of the y-bend.

    I have an idea for your next approach.
    Have we heard of cyclone - air / debris - separation in the vacuum cleaner industry? A good example is cyclone use in Dyson vacuum cleaner.
    For this discussion - air+skin vs bean - separation. Where by beans are trapped inside an external cyclone-canister while skin and air out to the vacuum cleaner. At peak air flow only air is isolated, play with air speed*volume to isolate skin from beans.

    Told ya, y'all need a centrifugal blower wired to a dimmer switch. (Or the much more expensive but more stable TRIAC) a medium size blower (4 inch or so) just like the tiny one in that vac but optimized for flow over pressure.
    Like, 60 USD from Amazon if you value that cash less than the amount of time you'd spend with a toolbox digging out the turbine, motor and capacitor from an air conditioner at a dump/recycling center. Best of luck.

    Salut Alex! Have you tested putting the nibs you've collected through the separator a few times again? Your efficiency might be 85% for a single pass so with a (manual) recycle that should push it up even further. You can do the same with the husk stream to recover the lost nibs as well.

    The nibs are always heavier than the husk if they are the same size.
    So you should run everything through sieves to seperate according to size
    then run each size throught your splitter with the air flow appropriate for the size

    You could also improve the deisgn with a laminar airflow filter. Basically just pack the plumbing tube with drinking straws. The small straws will create a more even airflow and improve your system without much cost.

    Try making a cyclone. Look it up. Not hard and can be made adjustable. Try pulling the air through it (vacuum). A very small cyclone can be very efficient. You may try finding a old vacuum cleaner that has multiple small cyclones. Sterilize this of course. Adjust pull out of the husks by adding adjustable fresh air inlets (holes located around cyclone body, fitted with sliding covers to adjust.

    J'avais plus de 5kg de graines fermentées que j'ai tout fait ici en France, c'était drôle, j'avais un incubateur (pour mes bébés caméléons de l'époque) et donc je m'en suis servi (temperature constante + humidité) donc la fermentation était plutôt facile et bien réussi !!
    Les noix de cacao je les ai récupéré à la côte d'Ivoire

    You could use an electric ducted fan for this. EDF for short. Used for rc "jet" planes. Very powerfull but you can regulate it. Also, a bit loud :P But hea. At least its not a wet grinder XD

    Looks like the husks in the nib bowl are quite large, you could seeve them with a rough seeve or colander.

    Why not bundle a whole bunch of larger diameter straws together and place within the inflow side to create a more laminar flow. This will help control turbulence and generate a slower speed that may then better separate the husks from the nibs. Would be cheap and easy to try out, and it it fails you haven’t destroyed any of your original setup.

    A butterfly valve would allow variably by partially closing off the airflow. The air would enter the pipe which is attached to a Y coupling. The base of the “Y” would point towards the butterfly valve. One leg of the “Y” is the air flow input and the other is the exhaust of excess air.

    Why not sift them first into large and small bits, then run each batch through using 2 different speed fans. That way you might get less small nibs mixed in with the husks due to an over-powered fan.

    I imagine it would be quite hard to buy fresh pods because pretty much all of them are used to make cocoa.
    You could try buying your own tree but they take over 4 years to grow any fruit and are quite picky when it comes to soil and temperature requirements. On top of that they easily grow to about 10 meters so it's not something you can grow indoors...
    So the best bet would probably be to travel to a place where they grow cocoa.

    There's an actual device for that. It is meant for cleaning berries. You connect it to the vacuum an pour the berries (or coco) thru, and the vacuum sucks all the light particles away.

    Why did you make it so complicated with that long tube to decrease the air flow, takes a lot of storage place? I would have just taken some slightly thicker plastic and made it 4 ply and attached it to the vacuum hose with a thick rubber band and poked a hole to the plastic to the size that would give the desired amount of air flow. And then run the nips and husks 2-4 times through. Kind of like reverse of using a piece of panty hose attached with a rubber band to the tip of the hose when wanting to pick up dust from a container of small things but not suck the little items to the vacuum hose. Or see if you have any plastic container top covers that would fit to the inflow tube, check how many holes you need to get the desired air flow and glue it in place. :) Love your videos, you are a kindred spirit, I do also create all kinds of gadgets, usually trying to recycle stuff for something new.

    Why not try to vary the airflow in order to find the sweetspot where you get the purest outcomes ?
    Also, why not run each bags multiples time in the machine in order to "purify" the nibs and not waste chocolate material with the husks.
