    I know this is old, but I made this yesterday and it is sensational. Of course, I added stuff for my tastes: more garlic, some basil, and mushrooms. I also added some anchovy paste and a tin of anchovies. Over bocatini. It was amazing.

    I find if you add the dried herbs when you’re sautéing the onions 🧅, it helps them release their fragrance so much better.

    This turned out delicious . . .second time I made it, I used an immersion blender to blend it down about half way, still chunky, but less so. Honestly, I think I prefer it this way.
    Love your channel . . .you’ve really taken my cooking to another level.

    my wife and I make this in 1 gallon batches and can it. We use it on everything. Will never by store bought tomato sauce again! Thank you Sam!!!

    I was worried about the balsamic, not sure why it was added but followed recipe exactly and I freeken love it! I dont think my balsamic was as thick so I also wondered if it was a balsamic reduction. Great sauce! Thank you for sharing

    I am Italian, my family is Italian, my grandmother and mothers sauce was a two day project and it was really good. They would be rolling in their graves with this recipe, but it is one of the BEST sauces I have ever eaten. I approve, lol. My new go to spaghetti sauce!

    Is it a coincidence that Sam and Man rhyme? NOPE SAM IS THE MAN!! Your kitchen is designed really well, and i really like the color scheme. I attempt all your recipes, and my family thanks you. I'm German, so Italian isn't my strongest, but everyone who eats my version of Sam's recipes are amazed. Great dad too, getting your son involved, making money and videos. Its a win-win!     I enjoyed the sauce tutorial. There have been many times over the years where I've had fresh homemade tomato sauce over here, and freshly cooked over easy eggs over there. I have NEVER thought about putting them together. Now, I have to give it a try!

    My sauce is real similar. I use the same San Marzano tomatoes and paste from Cento. I usually run the onion through the food processor because I like it a little smoother, and I like a little basil in it as well, but everything else is virtually the same. I usually simmer it for a few hours and taste it about a million times while cooking and tweak the spices as I go to get it just like I like it. I like it kind of spicy so I use more red pepper flake. I could easily eat and entire loaf of crusty Italian bread dipping it in the sauce. Literally every single person that has tried it has loved it. I put some over a homemade calzone for my mother in law and she completely lost her mind. She asked me to make her a whole batch of sauce which I gladly did. Now when I make it, I use 4 of those large cans of Tomatoes because I know people are going to want some. It freezes great too.

    Sam, your everyday tomato sauce just put my smoked deep dish pizza over the top! Wow! We just loved the sauce, the wife wants to keep it on hand for everything now!

    Instead of sugar to counter the acidity I use a 1/4 to 1/2 teaspoon of baking soda. I also use this in my ice tea to take out the acidity. It works like a charm.

    Sam you’re the man! I learn so much from you & this sauce is fantastic. I got some ground sausage & cooked it and then added onions, red pepper & garlic to it. After that cooked together I added the tomatoes & made a wicked meat sauce which I then made with ziti. Thanks again Sam! Love watching & learning from you

    I love your recipes! I have to say the secret is that balsamic vinegar. I added a fig balsamic vinegar to my sauce and omg...it was next level. The best sauce I ever had.

    Butter and oil together, I do that even with scrambled eggs. It's amazing. I think you got me started on that.
    You got me started on using avocado oil as well, but I mostly use it instead of avocado, such as in tuna salad.
    I consume a lot of tomato sauce. It struck me it would be better and cheaper if I make my own sauce every month and store it in the fridge. I can also get the varieties I want.
    Nothing to do while it simmers? You don't have any beer or wine?! That serious drinking time.

    I make a very similar sauce, however I like to put a piece of pork in the sauce while it simmers. The addition of the pork makes for a nicely balanced flavor, and you can enjoy the delicious tender pork after it has finished getting fork tender.

    This is almost exactly how I make tomato sauce all the way down to the Cento brand. However, I do add a dash of vodka.

    God I wish I could get those tomatoes but not anywhere I've been able to find. I'm from Canada too Sam but a small town, so no chance of that happening, is there any other tomatoes you would suggest?.     Kind of like huevos rancheros. Try pan-frying a corn tortilla with a bit of oil for a few seconds, put your egg over the tortilla and then the sauce, as you did.
    My tomato sauce for huevos rancheros has diced tomatoes, onion, fresh jalapenos, a healthy pinch of oregano and thyme, and s/p., and it's made essentially like you make your sauce. Best breakfast ever.

    I did about the same but cooked down my own homegrown Roma tomatoes. To deal with the seeds and skin I ran it through the Vitamix blender to the perfect consistency after it cooked down. Much easier than peeling. I’m binge watching you today. I enjoy your channel. Next time I fly to San Diego to see my sister I will try NNT.

    During my time in the U.S. Navy, during watch changing at midnight at sea, we had mid rats(middle rations) and one thing we had was this sauce and eggs which we called red lead and eggs,,, and most of us loved it, especially working for 18 hours on a rolling, back and forth war ship...

    honestly, I have found that the particular tomatoes you are using are expensive. Tuttorosso peeled plum tomatoes are about 1/3 of the price and in my opinion, taste absolutely great. I even make tomato soup with them. Thanks for your recipes!

    Omg. I love love love eggs with sauce. Sometimes I will make a tomato sauce and then add the eggs into it and let them poach in there. Other times I like to add a few over easy eggs to pasta and sauce. The yolk adds so much creaminess

    Sam, I’m American Italian, Siciliano, grandparents. We use canned tomatoes, paste, olive oil, onion, garlic, salt, pepper, ground fennel seed. Equals parts water to the tomatoes and paste, measured in the cans. Add, meatballs, Italian sweet sausage, piece of pork, or brociole. This is cooked about an hour or so, on low heat stirring often. Yes we add heat red pepper to it depending if cooking lobster, or squid in it.we never add sugar. If the tomatoes are too acid, my Mother would add a small pinch of backing soda to neutralize the acid, halfway through cooking, so it cooks out the acid in the tomatoes. I have added sweet red wine when braising brociole in the sauce. My grandparents and Mother called it gravy, not sauce. My grandmother would cook the eggs on top of the gravy, while it simmered. After mass on Sunday, we always visited our grandparents, to go see them, and my grandmother would let us dunk crusty bread in the gravy to taste it. Great memories, I’m 71 now grateful and blessed.♥️♥️🙏🙏🇺🇸🇺🇸

    Tomato paste needs to be fried off with the onions and dried herbs, but if it works it works! Looks amazing.

      So I tried it....lol...not a fan. Maybe I didn't cook it long enough or too much added which I just did a Tb but tasted more like a stew and it seemed to burn easier on the bottom as well which gave it another stewey element lol. It was a good try tho!

    11:25 It could be what is known as water hammer. Happens when you suddenly shut off water and there is not a pressure relief valve in your waterline. Can also happen when the water pressure is cranked too high. Solution is to install a hammer arrester on the waterline under your sink and clothes washer.

    I make this and its awesome. I have dietary restrictions so I leave out the sugar and cut back on the salt. Perfect sauce. Way better the than sauce out of a jar.

    I use two medium onions chopped four cloves garlic very little thinly sliced carrots add 4 oz or so olive oil to pan let everything get soft add a can or can a half up to you of whole canned tomatoes crush with potato masher add few oz of tomato paste ads tiny amount pasta water let simmer till done you also can add a little sugar or even add a hot pepper if you like make it your own .

    My tomato sauce starts with about 40 LBS of tomatoes that I juice down to about 5 gallons, boil that to about 2 gallons and can with lemon juice and sea salt. It's awesome. Ok I had 50 Roma tomato plants.

    Just got this simmering now! FANTASTIC flavor already! I love Cento tomatoes but because of covid and I live very rural I can't find the San marzano but Hunt's make them and they are not as good but still great to use. I always keep them in the pantry. I am going to use some of this in my baked beans instead of plain sauce! I will say one thing, people don't skimp! Use good olive oil, and great balsamic vinegar, plus San marzano tomatoes! If you don't this recipe will taste totally off! I am actually going to use some of this to dip my fresh baked bread in while I cook dinner. Awesome recipe!

    No basil? No bay leaf? Glad you remembered the tomato paste !!! ( I have never used onions, but I MIGHT put them in my mini chopper to mince them into mush.) I add 2 small 12 oz. cans of water & simmer 2-3 hours.

    Hey SAM! Im 63 been cooking for over 40 years! Im a damn good cook and so are you! 40 years ago a friend of mines mother, her name was Mary....an Italian woman and one of the best italian cooks Ive ever met was the first person that taught me how to make spaghetti sauce. Years later I moved out of state but went back home for a weeks vacation in the early 2000's. She invited me over for dinner. She if course made "gravy" which is what a lot of Italians call spaghetti sauce. She also made Gnocchis! I adore gnocchis. After the meal was over she told me how she made the gnocchis. Its usually made with potatos and eggs and flour and whatever else!. Well not hers!!!! She told me how she made them. At first I couldnt believe it but as soon as I got back home I had to make Mary's Gnocchis. They are unbelievable and guess what SAM!? Only 2 ingredients! Yep ! Just 2. And Potatoes is not one of the ingredients. If u want to makes the best...lightest and fluffiest gnocchis with just 2 ingredients! Let me know!!! Im happy to share the wealth!

      @@jomoncon mix equal parts of ricotta cheese and flour and make a dough! That's it! Just roll it out like a snake. Cut small pieces. Form your gnoccis and put them in boiling water. When they float to the top...they are done. Now how easy is that? No peeling and boiling potatoes...no eggs...so easy and delish. Enjoy!
