  • Canning diced tomatoes is easy, fast and requires very few tomatoes per can making this the perfect small batch and beginner friendly recipe.
    Canned Diced Tomatoes:
For one pint jar: 1 tsp salt(optional) & 1 TBSP lemon juice, jar filled to bottom rim with tomatoes
🚨 Make sure you only add cold jars to cold water or hot jars to hot water whn canning. If you add opposite temperatures you will likely break your glass.
    1. Wash tomatoes
    2. Dice tomatoes and remove stems and any bad parts.
    3. Fill either cold sterilized jars with tomatoes, lemon juice and salt. Wipe rim, secure ring and place in cold water in a stock pot. OR bring stock pot with empty jars to a boil, remove jars and fill with lemon juice, salt and tomatoes. Wipe rim and secure ring. Place back in hot water.
    4. Boil jars for 45 minutes.
    5. Remove from heat. Do NOT touch the tops.
    6. Remove the rings the next day and label accordingly.
