    --------- INGREDIENTS / for 12 servings / ---------
    CAKE (20.5 cm | 8 inch)
    • eggs (3 pcs)
    • sugar, powdered (32g | 3 1/2 TBSP + 4 1/2 tsp)
    • salt (a pinch)
    • flour, gluten-free (32g | 3 TBSP + 1/2 tsp) (I used Schär Mix C)
    • xanthan gum (1/3 tsp)
    • baking powder, gluten-free (1/5 tsp)
    YOGURT FILLING
    • heavy cream (137g | 1/2 cup + 4 tsp)
    • sugar, powdered (55g | 7 TBSP)
    • yogurt, plain, unsweetened (171g | 1/2 cup + 2 3/4 TBSP)
    • vanilla extract (4.2 g | 1 tsp)
    • water (25g | 1 1/2 TBSP + 1/2 tsp)
    • gelatin powder (4g | 1 1/3 tsp)
    • lemon juice (4.8g | 1 tsp) (you can omit)
    LIGHT GELATIN
    • peach syrup (165g | 1/4 cup)
    • gelatin powder (5g | 1 2/3 tsp)
    • peach compote (146g | app. 1 cup)
    ORANGE GELATIN
    • peach compote (200g | app. 1 1/3 cup)
    • peach syrup (100g | 3/4 cup)
    • gelatin powder (7g | 2 1/4 tsp)
    • lemon juice (4.8g | 1 tsp) (you can omit)
    *** TBSP = tablespoon, tsp = teaspoon
