  • Citrus Maple Gingered Carrots
    Ingredients
    1 16 oz bzg baby czrrots
    1 Tbsp orange zest
    1tsp lime zest
    1 tsp lemon zest
    2 tsp grated ginger root
    1 tsp ground cinnamon
    3 Tbsp maple syrup
    2 Tbsp salt
    1 cup purified water
    Directions
    Prepare brine by heating filtered water and mixing salt until dissolved.
    Place carrots in Quart Mason jar.
    Combine orange, lime and lemon zest with ginger, cinnamon and maple syrup. Add to brine. Mix well.
    Add brine to carrots leaving 1 inch headspace. Seal tightly with fermentation lid.
    Store at room temperature for 5-7 days, or until carrots have reached desired flavor. Seal tightly with Mason jar lid. Refrigerate.
