Hi, a small suggestion. Use alum (Phitkari) for washing amla, wipe it thoroughly and dry under sunlight for sometime. No change of any fungal formation.

I guess the reason is that the water with which you wash the amla is not sterilised /boiled. That is why wiping it dry is crucial. Any contamination can happen at that stage, I suppose.

You can keep it in fridge as it will keep fermenting. to slow the fermentation process better to keep in fridge, it can stay good for upto 1year
