I am from Canada and was adopted by a Canadian Ukranian family. My Mom made all the Ukranian food and taught me to as well. I'm currently sitting here, eating Ukranian Xmas leftovers that I made with my daughter: varenyki, holubtsi, nalysnyki, white navy beans, borscht and (store bought) Ukranian sausage. My sister and I made a batch at Christmas...Mom was from Poland....I stuff some with sauerkraut and smoked polish...some with potatoes...some with sweet cottage cheese....And then freeze them
Moms side of family mother was from Ukraine. My mom never did much of this cooking but 3 of her sisters did. We always called them petaheh . One aunt called them varenky. At Christmas time there would be plates full of different varieties , potatoes, sauerkraut, meat and dessert ones with fruit. I married womam with Polish heritage. Now i eat plan old pierogies 😊

In the basement of the school there was a big kitchen and the old babuskas would make pierogies twice a week and we had hot dogs for lunch on other days. The pierogies were so damn good. 3 kinds ...Potato and cheddar cheese ones, sauerkraut ones and Farmer's cheese ones all drenched in butter with a dollop of sour cream on the side on a paper plate with a white plastic fork. My mom and dad made them for the holidays christmas and easter same three kinds. Christmas and easter dinner, we had Turkey for Xmas, Ham for Easter with various trimmings, borscht along with a good butcher shop kielbasa and bakery babka and cheese cake and pierogies and holubtsi. Omg I am in Alabama but grew up In Wva I javent heard of farmers cheese since I gotten married moved down here ..They dont even know what " farmers cheese" is..I have scoured from mobile Alabama to Pensacola fla and everywhere else in between..ive even looked in New Orleans ( they might have it but I just didn't hit the right store there) it's rare down here...I love farmers cheese..always used it in my antipasto salad..

My family is Italian and my husband is Ukrainian and we love each other it's we've had some hard times right now between awful lot of stuff but anyway my daughter is raised up my daughter is Ukrainian and Italian and a beautiful young woman and she's trying to do her best and I'm doing my best too I remember when I first got married and he went to the house and her mom and dad were polish and Ukrainian please and play some good the food was so great and you know it's been rough but I know that is right I love to watch this kind of stuff

Flour, salt, water. I do not think Alina put egg. You do not put milk and butter in this preparation, because it should not be too humid otherwise too difficult to form varenyky. Also, you already have fat in it.
Smetana (or smotana) is a type of sour cream from Central and Eastern Europe. It is heaver and a bit more sour than american sour cream. I do like to add some grated horseradish to mine but it is not common to do so in Ukraine.

I have seen these made in various parts of Ukraine they are basically very similar except what you choose to put inside. The two variations or one without sour cream and the other with sour cream. It’s really just an individual taste although it may be prominent in the region you live in

Growing up in Canada, my parents would always use side pork instead of bacon. It's really hard to find now, but it's so good.
Just a side note… pierogi is Polish.

Do you use sour cream on your pirogies? In my Slovakian family I was criticized for doing this. Guess it was too "Russian."

I live in central Wisconsin among many descendants of Polish immigrants. I can find Paczkis in the supermarket. I've never seen them anywhere else.

Dough: 360g flour, 180 ml water, 1/2 TS salt, 2 SS oil, 50g flour for working with dough.
Farce: 300g potatoes, 1 oignon, fat(bacon?)
Sauce: oignon, non-salted bacon.
I believe it will give 30 varenyky, depending on the size.
Put in the boiling salted water, they are ready when come to the surface.
