Just wanna say that I have had seared Foie gras several times in the states, and it has always been best over either brioche or a bread-product (just had it the other night over a modified French-Toast with demi-glaze) and it was probably the best I've had. Some chefs here prefer putting it over a fruit like a glazed/carmalized pear or apple for some reason, but like I said I think it is far better over a bread product. Look at the video and notice all the clear grease in the pan is from the liver. It's pure awesomeness. It's also not cruel. If you ask bird specialists there is a mechanism for fatty livers like that to occur in nature. Usually they will gorge themselves before they fly south. The fatty liver is their fuel for long migrations. Also birds do not gag on food like we humans. Think about birds that swallow fish whole. The force feeding process is not cruel when you think about the things they usually eat in the wild. Also yes even ducks and geese will eat fish. Foie Gras is not respected enough. If you eat it, you'll want more I can assure you. I once had foie gras nigri severed at Japanese place. I had 2 orders because of money. Otherwise I would have eaten 10 orders of that stuff.

The Goose needs to be overfed, they put flexible tubes into their spouts and down their throats to feed them even more. It's definitely animal-abuse. Good quality fresh foie gras is also expensive in France. But it is still accessible to the middle class. The price depends a lot on the quality of the foie gras and its origin.

On voit sur votre vidéo que malgré tout il y a de la graisse dans le fond de la poêle, avec 4 tranches il y a tellement de graisse qu'il est pratiquement impossible de dorer les tranches. Je parle par expérience...
Il y aura par définition toujours de la graisse en abondance. C'est un foie GRAS :) Choisir un foie top qualité, sinon ça sera la cata... Poêle chaude mais sans excès et éliminer la graisse au fur et à mesure de la cuisson. Ne pas trop "charger" la poêle, en utiliser plusieurs le cas échéant, ou une plancha.

Pour obtenir un foie de cette taille, il ne faut pas avoir de cœur voilà.
