Made this with Asiago, Gouda, and Provolone cheese sauce. I drove the moisture out of the Cauliflower rice in a very large sauté pan until it started to brown. I then added minced garlic, super fine diced onions & red peppers to ground sirloin and 6 bratwurst. I made 3tbls. size meatballs. Air fried until 165 internal. Highly addictive flavor. Love Brats. In Michigan we had an outdoor fire pit. Made brats and cooked onions and bell peppers in a frying pan. Cooked the brats like hot dogs. We would then use our popcorn poppers to make popcorn or use our pie makers and make cherry, blueberry or apple pies. I sure miss that. Doesn’t get cold enough in South Georgia to have a fire pit.

Mouth watering👌🏼 if you’re ever looking for a keto friendly bread crumb replacement I use dehydrated zucchini. I dehydrate them in long slices like a lasagna noodle and I just zip it in the food processor for bread crumbs.
With ancestors from Wisconsin - then slow and low bake carrots, beets, radish (daikon radish), turnip, parsnip, rutabaga (Swedes), salsify ... (onions, garlic, leeks, shallots, scallions) ... for caramelized, sweet, tender root and bulb vegs for the side entries to this meal - and you won't be disappointed.
From Wisconsin and so going to try these!!! I have a local meat market with the best brats and just 15 minute drive to best and award winning smoked cheese. Thanks for sharing. Blessings!
You can also use some of the zucchini abundance to add moisture. I shred it and freeze in baggies to use all year. You could probably rice it as well before freezing. Just drain of the excess liquid.

I love these Saturday cooking sessions. Please keep making them. When I make meatballs, hamburgers, meatloaf I mix ground beef with sweet Italian sausage. No need to add extra seasoning or spices. The cheese sauce is one I will be adding now.

My husband is from Wisconsin and the cheese thing is for real. Before I lived there I did not eat cheese but that all changed. That recipe looks fabulous and there is no comparison to Wisconsin brats which cannot be found in Texas.

I make bratwurst soup. Basically it is veggie soup with chicken broth and use cut up brats for the meat. For veggies I add spuds carrots, celery, and onion. Sometimes I use cabbage, and sometimes I add a bit of kraut. We like it, but we are cheeseheads too. So its part of our aboriginal Badger diet. I will try this for sure with non smoked cheese sauce.
I use grated parmesan cheese in place of bread crumbs in my meatballs or meatloaf. I'm allergic to pork so I had to find a replacement for ground pork rinds found in many keto recipes.
Where do you get the Wisconsin brat seasoning mix? Did you make the brats yourself or had them made? Originally from Wisconsin, we live in South Carolina now and don’t get back often enough to keep our freezer stocked with those amazing Wisconsin brats from Sorgs in Delevan. Thanks!

I made this cheese sauce as a pizza sauce for my Philly steak and cheese pizza and it turned out amazing. I generally make an Alfredo sauce for it but this took the pizza to a whole new level. Not keto pizza though .

Step the flavor up one more notch and add sliced yellow onion on top of the meatballs while they cook you don't have to eat them if it's too many carbs but the flavor is great and would go with that cheese sauce as well.

Check online, but I am pretty sure xanthan gum is free of gluten. I am gluten sensitive too, and I use it with my organic Sunrise Mills weak gluten flour--less than 1 tsp per loaf of bread. I have no problems. Adding it makes sandwiches hold together better.

Cheese makes everything better! Those look scrumptious! I home can meatballs without any binders. Just the meat(s) and seasonings and they hold up great, even after par-cooking and pressure cooking. So, I would skip the step of prepping the cauliflower rice (not a fan, anyway). But that cheese sauce ... oh, my!!! That would be so good over so many foods from cheeseburgers to broccoli! Or just hand me a spoon LOL
Other keto options for thickeners for the cheese sauce would be: ground chia seeds, ground flax seeds, guar gum, and with this small amount, you might also get by with using corn or potato starch, but it would change the total carb count if you are counting carbs. 🙂
