VELICIOUS SEASON 3 EPISODE 2 : RAW VEGAN KIMCHI

  • Yin takes everybody's favourite Korean side dish and turns it into raw, vegan deliciousness! It's ridiculously easy to make too.
    Raw Vegan Kimchi
    Ingredients
    1 napa cabbage
    2 tablespoons organic salt
    3 cloves garlic, minced
    1 inch of fresh ginger, grated
    1 apple, cut into strips
    3 tablespoons Korean chilli flakes
    4 spring onions, cut into 1-inch pieces
    1 red chilli, sliced
    2 carrots, grated

    This recipe is DELICIOUS. I'd never made my own Kimchi before and today I'm onto my second batch! It's such a simple recipe and easy to follow. I haven't any apple today, so I'm adding some home-grown English plums instead. Keep up the good work! Thank you. Hilly in Norfolk, UK. x

    Do you believe that a raw vegan kimchi can be made without salt? For someone that have let say hypertension.
    And if so, to make the cabbage tender, with something else then the salt, have you ever try using one of the following method:
    1)Putting the cabbage in the freezer, than let it defrost at room temperature to make it tender (the water will come out of the cabbage and make it soft), and then procede with the rest of the recipe
    2) Putting cabbage in the dehydrator to make the cabbage soft, then procede with the rest of the recipe
    3) let the cabbage dehydrate itself in the fridge over time, then use that sloopy cabbage and procede with the rest of the recipe

    PLS READ If ur using a jar with a lid don’t tighten the lid all the way!! I did and my kimchi jars basically exploded lol 😔

      Which is why I used a Fido jar which allows the CO2 to release through the rubber gasket.
