I'm a huge fan! But I beg to differ with you regarding Almaco Jacks.i would stack up an Almaco Jack: grilled with a light sprinkle of Everglades seasoning topped with a lemon/butter/capers sauce against just about any fish (i.e. Hogfish). Give it a try!
