@@dcsc1 idk if I’ve seen them in a roux like that before, but it’s certainly interesting. In western cuisine we usually grind peppercorns & don’t cook them into sauces whole like this but I think it would be very good to do it like this
@@booba2141 yeah I grind pepper in my roux too but only white pepper. I love black pepper way more but I find white pepper in a roux to be much more delicate in flavour. However, I use whole peppercorns in my tomato and bolognase sauces. It actually really gives it an overall deeper pepper flavour and cooking it in the sauce softens them so its a nice little soft kick when you bite into them.
