Cheesecake tips (that nobody asked for but I’ve learned to hone over the years so I’m infodumping and making it y’all’s problem): Room. Temp. Ingredients. All of them. Eggs, creams, cheeses, all of it. Do room temp. It makes it much smoother and silkier, and helps it cook more evenly and reliably. Also I love water baths and crack-vent cooling after it’s done. But honestly those are bonus and take more effort and time.
