I'm an Electronics and Instrumentation Engineer. I graduated in 2017. It's been almost 2 yrs since I created my profile on Fresher's world. I feel pity to mention that I haven't got a single core or Instrumentation industry job from ur domain. It is sad say that all the insights that you are sharing is not practical. Practically, since there are lesser no of candidates appearing for Gate, the average score goes high and this the cutoff goes higher than the other branches. Plus there are very less seats for EIE in PSU's, that's coz an Industry need thousand to ME or EE Engineers to run the plant bt need even less than 100 EIE Engineers to control the processes running in the plant. And all the credits goes to modern automation techniques. I agree an EIE Engineer can easily get an IT job. But if one has to ultimately work for an IT firm I suggest he should better go for CSE or IT, afterall a CSE fresher always has more software knowledge than an EIE fresher(exceptions excluded).
