Re rigging time, I've timed a father and daughter team, arriving after a long road trip, raise mast, open amas and rig tramps to be ready to sail in 40 mins, but that demands organization and practice. Takes me at least an hour but I double-check things ;-) Either way, its worth it.

Wind speed, boat speed? Looks like very good performance.

Wind speed about 12k. In flat water like this, upwind speed 8-10K and 10-12k broad reaching.

Trapeze harness, like Hobie Cat sailors use?

Yes; I was going to say that a trapeze harness for this boat is missing, but you beat me to it!

Trap totally not required, but adds a fun element for those interested, plus another knot. Read article "What is like to sail a W17 for the first time"

This is not a Windrider 17. Looks like a Cross? Maybe there’s another W17?

No, it is a W17 trimaran designed and built by Mike Waters. smalltridesign.com/W17/greybox/W17-Trimaran.html

Yes, there IS indeed a specific W17 ... the WindRider (WR17) is VERY different and this is a major development beyond the Cross, with asymmetrical amas, deeper main hull, a more sophisticated rig and combines many other performance details. Nearly 200 plan sets now out there. Oodles of info here : www.smalltridesign.com/W17/greybox/W17-Trimaran.html
