Running above 2nd speed with that load of dough does nothing for the process, and is abusing the machine. I own two V1401 machines, and we incorporate on speed 1, and finish dough with speed 2.
This customer runs 60 lbs of donut dough in 3rd gear and wanted to see this machine load tested in 3rd. Though the dough I had in it would be abusing it if ran that way for very long. Believe it or not the Hobart chart says the M-802 can mix 60 lbs of donut dough in 3rd gear. I didn't believe it until I looked it up.
@@topbunnbakeryequipment5821 Fair enough. We don't usually run dough that soft, with a hook, but even if we did, I don't see a need to mix it any faster than speed 2. Even it you CAN, doesn't mean you SHOULD.
