@@johnmartinez7440 any average restaurant. Say for example, osmow's shawarma. Their fries are deep fried but they're frozen before that. They don't cut them in the kitchen.
It's so simple, I'll try it. Usually I just buy the frozen ones and stick them in the air fryer oven for 20 minutes. I used to deep fry in oil, but it's a bit messy and you need a lot of oil. The deep fried ones are the most tasty though.
I just bought some huge portabella mushroom caps and am going to apply Jacque's oven-fry method to them and see what happens! Thanks for that notion.... (and I'll shorten bake time, obviously)
I do basically identical chips but I parboil first then shake through a colander then do the seasoning because I like the fluffy edges (that become nice crispy edges), my oven has an "air fryer" rack in the top, I make them when I'm cooking something else as a roast so it doesn't matter if any oil drips. Very nice. Don't have to parboil them though, and most of the time I don't bother haha.
Funny :) Chef gets closer and closer to just normal household's kitchen, in both agenda, ingredients and techniques. Feels reassuring that our little "rounding the squares" is not a crime in the kitchen!
Ive been making these ‘almost’ exactly the same way for years. Only difference is I par-boil the fries after I’ve cut and washed them. Then I drain in a colander before putting into the oven 😊
So much better than the usual deep fried fries. Use air fryer (or toaster oven with air fryer setting) and they will bake in 1/2 the time. I use a variety of spices such as cumin, garlic powder, oregano, etc.
To get these crispy, try baking them twice. When they start to sizzle, turn off the oven, open the door and let them cool off. Switch the oven on again later and they will crisp up nicely.
Looking forward to making these tasty potatoes! Thank you chef! You make cooking food simple and fun. Love learning from you since I was a child. That is quite a few decades now.
Always love your videos for years but I never put them in water. Just spread them on a large pan with oil and seasoning then under the top broiler in the over on 525 degrees. Takes about 20 minutes, flip them half way thru. Better than french fries even. I cut up and onion with it
Done it like this a few times, and although it is delicious they tend to not turn out crispy at all. Boiling them before you put them in the oven seems to work better
If you have one, place the potatoes on top of a wire rack placed on top of the baking sheet. You need the air flow on all sides to prevent the sogginess. These potatoes seems better suited for using an air fryer for that reason.
I parboil, then finish them in the oven - lastly under the broiler for crispness. Often as not though I make flavour full smashed potatoes instead. Deliciously crispy outside and a bit of softness within. They do well in my biggish toaster oven
Lucky for Claudine that it worked out. I bet the chef has quite a temper! Just kidding! Hard to imagine a kinder, gentler man! Now I'm off to make some oven fires like those!
Put it in the air fryer with no oil and half the cooking time of the oven you'll get the best french fries. Not even kidding. The revolution of the air fryer is real.
I like to use my air fryer to dry. 5 minutes. Then tossed in the oven. The air fryer dries out the potatoes it I were to fully cook them in the air fryer. Love you Mr Pepin.
One trick I learned for sweet potato oven fries is to par boil and freeze first. Then you can oven bake them, but flip them over halfway through. This may work for regular fries if you want them crispy.

Can't wait to try these. Tired of paying $5 for $1 worth of frozen fries, and frying them is too greasy.
cant believe it never occured to me to make my own lol
Can do the same by cutting them into wedges too. Might have to increase the cooking time a bit though, depending on the thickness of them.
I'm confused. Where are you paying 5x the amount for frozen fries?

"If it doesn't work it's Claudine's fault". Love the Papa and daughter give and take.
I agree. I stopped that scene and slowed it down just to make sure I heard it right.
That was adorable, wasn't it?
I love that man! So adorable!
Jaque is the only legendary chef that I've seen that can make a French fry dance with happiness in a bowl before it gets cooked
If ever you needed a perfect cooking video, this is it. Merci beaucoup Jacques.
The man cannot be stopped!! He keeps going and going and going….
🔋🐰🥁Thank you, chef! Happy cooking ❤
I can watch this man make the most basic recipe and I'd still learn something from it.
Exactly.
My Grandpa used to make these but with Italian seasonings, every time I make them I think of him now. RIP Grandpa
Herbes de Provence and Italian seasoning are basically the same thing.

Master French chef Jacques Pépin is totally awesome! He is the best chef and teacher!
The fact that people dont understand this is one of the greatest chefs to ever live lol
I don't get this?--- from the comments it seems everyone here knows who the Chef is! "`\(^=^)/`"

This is delicious and also guilt free. Thank you Jacques and Claudine!
Master Jacques Pepin teaching us how to cook french fries. How appropriate. Thanks :)
I was hoping he found a half mushroom from the fridge and tossed it in. I would eat that in a heartbeat.
You are too funny.

They look more like chips than "french fries", but I can almost smell them through the screen. Yum.
Done it like this a few times, and although it is delicious they tend to not turn out crispy at all. Boiling them before you put them in the oven seems to work better
...and even freezing them, I'm told!
Thought about doing just that.
As traditionally they need to be fried twice, once at a lower temperature and the second at a hotter temp to crisp them up, that makes sense.

Id toss the fries in a tin covered tray for the first 20-30 min first, add a bit of water at the bottom of the tray.
I love french fries but I hate the smell that's in the house when you fry ANYTHING...This is an excellent alternative for potatoes 👍🏼💛.
French fries??? no BELGIAN fries are the best
Appy cooking to you, too, Chef!
Looks good, will try it
You will need to flip these fries a couple times as they cook
Looks tasty

I've done this before with russets and olive oil, but i think i will try his potatoes with peanut oil next time.
I have to try these with the seasoning you are recommending. ❤️
Nice!
Those fries look great! Does it matter if you put the pan in the middle or the bottom rack of the oven?
One trick I learned for sweet potato oven fries is to par boil and freeze first. Then you can oven bake them, but flip them over halfway through. This may work for regular fries if you want them crispy.

Looks more like Yukon Gold to me.
I laughed at your comment, "if this doesn't work, its Claudine's fault"
Yes! ⬆
I wonder what type of potato works best with this method, i.e. starchy or less starchy?
He's a magician. Things keep disappearing, and he soaked those fries in seconds instead of minutes!
I thought he said, "a gnostic pan". A no-stick pan. Aha!
Im pretty sure that frenchie could cook a shoe and it would taste pretty damn good and paprika on potatoes is great especially that smoked paprika
Can this be made in an Air Fryer?
