This video is amazing. The only thing that isn't clear to me is why the Oestradiol only increases exponentially in oestrus - doesn't oestradiol increase exponentially no matter whether it has an effect on the GnRH or not?

i think the graffian follicle is the reason for estradiol production as long as the follicle is there...andd that's to make the cow show the heat signs
Probably because Oestradiol is secreted by follicle which only grows during the estrus period.
