Thanks for watching this week’s TH-cam video! I’m curious; what type of frosting is your favourite to use in hot weather? Comment down below! Get my frosting recipe here 👉 philosophyofyum.com/low-sugar-frosting-vanilla/
I've been telling my family how important your newsletters and youtube encouragement has ment me. Your like a friend. Im in Colorado near Grand Junction in a desert. Thank you. Maggie
Thank you so so much for sharing your knowledge. I have 2 questions. 1•) What is the food coloring you mentioned for oil-based frosting? 2•) Would you be so kind to make a video step-by-step about your unique frosting, please? I just found you and loved your content 🙏👩🍳
Hey Cynthia! You're welcome :) The colouring is called "Color Mill". You'll LOVE it - it's great! I'll consider making a video for my frosting recipe. We moved recently and unfortunately the whole kitchen needs to be redone! So, until that's done, I won't be able to make a video.
Thank you for sharing this! Although according to our laws in my state we can’t sell home baked goods with dairy in the frosting I will still like to try it for my family and myself personally. Fortunately I also learned that white chocolate and agar agar are good non dairy stabilizers as well! Thank you for your wealth of knowledge 😊
You are so welcome! That is great info for the white chocolate, and I would recommend doing a google search for dairy free frosting recipes and testing some out that have high ratings - thank you so much!
It's such a pleasure Nicola! I mention at the end of the video that I make my own unique frosting that doesn't use butter (or shortening) :) The link to my frosting recipe is in the video description.
hi,thanks for your video. i love ur ideas.adding shortening or agar agar is such a good idea thank you. besides, may i ask you a question?do you know if i decrease the amount of sugar will change the texture of America buttercream?thanks in advance
You're welcome! I'm glad to hear the video gave you some ideas :) If you add less sugar to American Buttercream, it'll be more runny and even less stable at room temperature!
Thank you, I have looked all over South Africa for shortening, where do I find shortening in SA What I also found on my search was that shortening substitute in SA is holsum, is this correct?
Hey Ntsiki! You do get shortening in South African grocery shops like PnP and Checkers - or just search on Google. You'll need to test it out and see what works in your frosting recipe :)
Hi! Aurelia. Can I substitute the whipping cream for High ratio shortening for the ultimate cream cheese frosting? I'm going to try it for red velvet layer cake. I lived in tropical Asia country in Malaysia, the wether is hot & humid.
Hey Kelly! I'm so sorry for my tardy reply! I somehow missed your comment. Unfortunately you can't substitute the cream for shortening. As soon as you add that much fat to this particular frosting recipe, the frosting will become runny.
I have now tried the white wooden spoon wirh American Butter cream and it works beautifully. I once went to a cupcake decorating class and the teacher mentioned that they use it in their bakery because it was more stable than butter in SA heat. Never thought it would work but there is so much mention of shortening on TH-cam tutorials I decided to give it a try. Personally I don't like butter, so to me, Swiss or Italian meringue BC does not taste nice so I'll try some with a small batch and see what happens

Oh my gosh! Thank you so so so much! What kind of brand do you use of shortening?

We don't have vegetable shortening available in my country, can I substitute with margarine?
It might melt, since margarine should be refrigerated. You may want to do a test with it first.
Yay, someone from South Africa with great advice. In South Africa, what do you consider shortening to be? White wooden spoon or Holsum? Thanks
Hi Linda! Personally, I never use shortening, so you'll need to test out the available brands to see what works for you :)
Holsum

Will Holsum Solid Vegetable Oil Brick work well in a frosting? I think it may be the closest to shortening.
Unfortunately I don't personally use shortening at all. You'll have to try it out and see if it works for you :)
