  • Let’s make a classic sourdough bread🌾
    Ingredients:
    ⚜️500 g bread flour
    ⚜️400 g water 80%
    ⚜️75 g active sourdough starter 15%
    ⚜️10 g salt 2%
    1. Mix all the ingredients and let the dough rest for 30 minutes.
    2. Perform 4 stretch & fold sets in 30-min intervals.
    3. Bulk fermentation: 5-7 hours (room temp 75°F/24°C)
    4. Proofing: 3 hours (room temp 72°F/22°C)
    5. Preheat the oven and the Dutch oven to 450°F/232°C for 30 minutes; in the meantime, let the dough rest in the freezer.
    6. Score the bread and bake it for 25 minutes with the lid on.
    7. Turn down the temperature to 440°F/227°C and bake it for 25 more minutes.
    8. Let the bread cool for at least 1 hour before slicing.
