There was an attempted hand wave that the gorons were picky eaters and that only the rocks INSIDE Dodongo’s Cavern were palatable to them, so they couldn’t stomach eating the boulder blocking the entrance. My head canon is that by the time they had become hungry enough to eat the boulder they wouldn’t have regained the strength to deal with the resurgence of dodongos inside the cavern, which was also mentioned. I guess Ganondorf revived the dodongos before he blocked the entrance, because how else would the gorons know that they had reappeared inside the caves. It’s still a plot-hole, but not because it was completely ignored by the developers, it just wasn’t addressed convincingly. But, I’m of the opinion the the Zelda series has been written vaguely by design so that it can stimulate the fans’ imaginations by filling in the gaps and inconsistencies. For better or worse, it’s one of the main reasons I love the franchise.

I'm pretty sure in the game they talk about how they don't just eat any stones, they only eat the ones inside the cavern. Whether that's out of taste or necessity I do not remember if that's stated
I felt the concept of the Gorons eating specific rocks was a stupid work around because in the end it's basically "let's eat dirt covered rocks or we can go inside that cavern and eat rocks covered in dirt with maybe some calcium or salt

There was an attempted hand wave that the gorons were picky eaters and that only the rocks INSIDE Dodongo’s Cavern were palatable to them, so they couldn’t stomach eating the boulder blocking the entrance. My head canon is that by the time they had become hungry enough to eat the boulder they wouldn’t have regained the strength to deal with the resurgence of dodongos inside the cavern, which was also mentioned.
I guess Ganondorf revived the dodongos before he blocked the entrance, because how else would the gorons know that they had reappeared inside the caves.
It’s still a plot-hole, but not because it was completely ignored by the developers, it just wasn’t addressed convincingly.
But, I’m of the opinion the the Zelda series has been written vaguely by design so that it can stimulate the fans’ imaginations by filling in the gaps and inconsistencies. For better or worse, it’s one of the main reasons I love the franchise.
I always assumed that they couldn’t eat that kind of rock. Like maybe they can’t digest it or maybe ganondorfs magic makes it toxic to them.
