I have one question: on your webpage the written recipe includes 125ml freshly squeezed orange juice, but then it s not included in the preparation, nor did i see it being used in the video. Dimitra, this is pretty close to a tarta de Santiago, done with lemon. I'll follow your directions to substitute the orange for lemon. From memory, (so I hope it's correct), toast 3C almonds in oven. Cool and grind, it's okay if there's an occasional odd puece of almond in there. About the same amount of butter. 2/3C sugar. But 7 eggs, and instead of separating them, just beat after each egg. 1/4 or 1/3 C our, I've used rice flour to keep it gluten free, works fine. I think the same with vanilla, salt, haven't seen your recipe for the juice yet. Happy holidays to you and your family!

This looks yummy but I prefer the gluten-free recipes that are very similar to this but use whole pre-boiled oranges to give an intense bitter orange flavour. Have you a similar recipe?

Sara, if your eggs white don't beat up the probability is that the utensil that you are using might have some fat or other grease in it. The bowl that you use should be extra clean from any other ingredients. Not that you are not clean but if any sediments are in the bowl the egg white will never beat. Also if the eggs are cold ❄ they will never beat, room temperature is the best. Also try to add a teaspoon of cream of tartar to the room temperature eggs 🥚. This will work for sure. All the best. 👍

I always made a Swiss roll cake every December on my birthday for my family and co workers since I love to bake it but can't eat it anymore as easily due to gi post surgical issues ( post cholesectomy nightmare. Only bland dietary sweets will do.) Thanks, if you know I'd love to hear your take. That or it's apple strudel...gf puff pastry if you have done this. Leavening agent I adjust based on recipe.

I like almonds but not almond flavour, marzipan, frangipane, if you are like me, I think leaving out the almond extract with be enough to make not taste like marzipan. I have made almond 'muffins' in with almond flour and its not marzipany. if you can't find almond flour you can easily make it, if you have a food processor, is just ground almonds, even almonds with skin on should be fine

In fact, the original recipe from Spain is quite dry, so if you eat it in Spain, they often ask if you want some sherry poured over it. My recipe does not require sherry, as it is not dry-- but it doesn't come out exactly like the traditional one. It's just more dense because it has almost no flour in it. 2 sticks of butter, 7 eggs, 3 cups of ground almonds, and 1/3 of a cup of any kind of flour you want. As well as juice and zest of a Lemon

Thats what i understand... whats the diffrence instead of mixing them altogether?? What difference is between almond and ordinary flour? Classic flour absorbs more liquid than almond i guess?

I have seen recipes where the oranges are boiled for at least 2 hours and the whole oranges are blended and the pulp added to the mixture

1 hour for a cake??? Usually it takes 30 to 40 minutes to me!!! Who knows....
