  • Here’s a simple and easy Mashed Tomato Chutney recipe, perfect as a quick side dish for idli, dosa, or chapati.
    Ingredients:
    Big-sized tomatoes - 5
    Medium-sized onion - 1 (chopped)
    Green chili - 1 (chopped)
    Garlic - 5 cloves (crushed)
    Coconut oil - 1 tbsp
    Mustard seeds - ½ tsp
    Cumin seeds - ½ tsp
    Ginger - 1 small piece (finely chopped)
    Sambar powder - 1 tsp
    Turmeric powder 1/4 tea spoon
    Rice flour - 1 tsp (for slight thickness)
    Curry leaves - few
    Coriander leaves - few (chopped)
    Salt - to taste
    Instructions:
    1. Heat Oil: In a pan, heat 1 tbsp of coconut oil.
    2. Tempering: Add mustard seeds, cumin seeds, and let them splutter.
    3. Sauté: Add curry leaves few chopped onions, green chili, crushed garlic, and ginger. Sauté until onions turn soft.
    4. Cook Tomatoes: Add chopped tomatoes and salt. Mash them slightly and cook until soft.
    5. Spice It Up: Add sambar powder and turmeric powder mix well.
    6. Thicken: Mix rice flour with little water and add it to the chutney. Stir well to avoid lumps.
    7. Final Touch: Add coriander leaves. Cook for another minute.
    8. Serve: Enjoy hot with idli, dosa, or chapathi
