This style looks very clever, for lack of a better word. I did notice it before but never knew the specific term. Might be a good topic for the next challenge, perhaps.

When I reflect shapes I always get the dialog box where I have to click copy. On your videos it looks like you always bypass that somehow. Do you know how that’s possible?

Sounds like you're double-clicking the Reflect tool, which is what brings up the dialogue box. If you single click it or type letter O to activate, then click somewhere to be the anchor, and then click and drag the object. You'll see it moving in real time, no dialogue box.
You don't even need to copy/paste first. You can just select the object, type O, click your anchor, and Alt (or Option) + drag to copy and reflect at the same time.
