Start with the interior of the chicken and then the exterior of the chicken. Best to marinate at least 20 minutes. 3. Fold the chicken wings back and secure tightly. 4. Position the whole chicken over the beer can (containing ½ of the beer), and pull the bottom of the chicken until it covers the whole beer can and the whole chicken is able to sit securely. Make sure the top of the chicken is wide and hollow for better ventilation when baking. 5. Optional to spray a coat of oil on the entire chicken for crispy skin. 6. Place the chicken on top of a cooking tray lined with aluminium foil paper. 7. Bake at 180C (356F) for about 35 to 45 minutes depending on the size of your chicken or adjust accordingly to your oven temperature and time. For crispier chicken skin, bake for 30 minutes at 180C (356F) then increase temperature to 200C (392F) until cooked. 8. Coconut milk - 200g Milk - 100g Sugar - 60g Mango cubes - optional Garnish topping ingredient: Osmanthus jam Methods: 1. In a cooking pot, add in coconut milk, milk, sugar, and cook until the sugar has melted. 2. Add in dissolved gelatin powder and mix well. This is the coconut milk mixture. 3. To assemble, add about 1 tbsp of cooked tapioca into a tart mould then pour in coconut milk mixture and mix well. Continue with the rest of the moulds. 4. Put in the refrigerator for 2 hours to set.
